Best Peach Jam there is and makes a great filling for macarons!
2 envelopes Pectin
7 1/2 c sugar
1/4 c lemon juice
Dip peaches in boiling water for 20-30 seconds, then in cold water.
Peel and pit
Chop in food processor
In large pot bring peaches, lemon juice and sugar to a boil for 1 minute constantly stirring
Remove from heat and stir in pectin quickly
Skim foam and stir for 5 mins
Pour into sterilized jars and seal.
