My parents were celebrating their 60th wedding anniversary and we were to have a small family dinner in their honour. Because I wouldn’t have time to do any baking once I got there, my challenge was to see if I could get a cake from Calgary to Montreal!
Surprisingly enough, it was easier than I expected. Three layers of cake were wrapped in saran and then frozen. I then used cake boards between each layer and top and bottom and wrapped it all in foil. This frozen bundle of cake layers was then strategically placed in my suitcase along with some frozen Swiss Meringue Buttercream. Adding some bits of fondant, a jar of Cocoa Amaretto Raspberry Jam for filling and a few tools and I was all set to go.
When I arrived, everything was thawed but amazingly in good shape. All that was left to do was assemble and ice the cake and whip up a few fondant daffodils for the top and we were ready to go!
